We're thrilled that July has arrived, and we're absolutely loving it!

We trust that you had an incredible Fourth of July weekend and were able to relax and spend quality time with your loved ones. 🎇

You may have heard about our Step into Summer Challenge that took place in June and we are so excited to share the results.

Four teams went head to head while supporting and motivating each other. We quickly realized we have team members who are training for marathons, spend hours running around with their kiddos on the weekends, and some love using their desk treadmill!

Congratulations to team #1 who completed more than 3.2 MILLION steps! Together our four teams completed over 9.4 MILLION steps!

7. Wellness Wednesday...

At TOC we share many wellness tips and delicious recipes. Here is a healthy, mouth-watering recipe from one of our amazing team members, Lauren Barbour. She calls it Cowboy Caviar. Let us know if you make it and what you think!

Cowboy Caviar:

Bell peppers

(red, green, and orange)

Cucumber

Onion

(whatever type you like best)

One can black bean

One can chickpeas

Crispy sweet corn

Cilantro

(Some other great things to add are tomato, jalapeno, different types of beans, avocado, mango, or feta)

Dice and throw into a big bowl.

Dressing:

1/3 cup olive oil

¼ cup raw honey

¼ cup apple cider vinegar

Add into a small bowl and whisk together well.

Add in some spices (salt, pepper, garlic powder, paprika)

Pour your dressing over your diced veggies and set in the fridge for at least one hour.

The longer you let it sit in the dressing, the better it gets!

Enjoy this with tortilla chips, on tacos, or on your favorite rice bowl. The possibilities (and the healthy fiber) are endless!
